家常大肉菜:香菇烧鸡

香菇烧鸡
主料:土鸡半只,鲜香菇适量;
配料:青尖椒2个,红尖椒2个,洋葱小半个;
调料:老抽1小匙,生抽1大匙,白糖1小匙,料酒2大匙,盐、葱、姜各适量;


做法:

1准备好各种原料,香菇剪去蒂上有泥沙的部份洗净沥干;
2.将土鸡斩成块;
3.青红尖椒切滚刀块,香菇从柄部开始撕成四小朵,洋葱切块,姜切片,葱切段;
4.热锅放油,下入鸡块,爆炒至鸡块出油;
5.放入料酒,炒匀;
6.放入老抽、生抽;
7.炒匀至鸡块上色;
8.放入香菇、姜片,翻炒至香菇变软;
9.放入一小碗热水;
10.大火烧开后转中火,煮至汤汁收干;
11.放入青红尖椒、盐、白糖,炒匀至辣椒断生;
12.放入洋葱,翻炒至断生后关火,最后放入葱段炒匀即可。

经验分享:
1.鲜香菇切去蒂上有泥沙的部份后洗净,柄不要去掉,连柄一起撕开成小朵即可;
2.鸡块下锅后要大火爆炒,炒至鸡块出油;
